Spice Gills

Delicious crispy-skinned salmon on a bed of velvety pureed carrot and lentils, is further enhanced by the zesty citrus flavour from our Lemon Agrumato Olive Oil.

  1. Mix one finely sliced lettuce with the honey yoghurt and place in the fridge
  2. Mix the puffed rice, finely sliced fresh coriander and garam masala in a bowl and mix
  3. Heat a saucepan over a medium – high heat
  4. Add Pendleton EVOO and fry half of a brown onion and 2 cloves of finely sliced garlic
  5. Add 2 sliced carrots, 1 cup of yellow lentils, 2 stems of curry leaves and 1 tsp of curry powder to the pan and lightly fry until fragrant
  6. Add boiling water to the saucepan until covered and bring to the boil
  7. Place lid on the pan and reduce to a simmer / low heat
  8. Cook for approx. 10 minutes until the carrots are tender
  9. Set aside and allow to cool slightly
  10. Once cooled, place the contents into a blender (or use a stick blender in the pan)
  11. Blitz to a smooth consistency and season to taste
  12. Return to the stove and re-heat over a very low simmer, stirring regularly (keep an eye on the pan and add a little water if it thickens too much)
  13. Heat a frypan on medium – high heat
  14. Drizzle with Pendleton Lemon Agrumato EVOO
  15. Place the salmon in the pan skin side down and fry for approx. 3 - 5 minutes until the skin is crispy and golden
  16. Reduce to a low – medium heat and flip the salmon
  17. Cook for a further 1 – 2 minutes
  18. While the salmon is finishing cooking, spoon the spiced carrot & lentil puree onto a plate
  19. Spoon some of the lettuce mix onto the plate
  20. Carefully remove the salmon and place on the plate
  21. Drizzle with more Pendleton Lemon Agrumato EVOO
  22. Sprinkle with the spiced puffed rice & coriander
